(ARA) – Once the warm weather arrives, we are all searching for ways to make our meals not only healthy, but refreshing and delicious. And we all want quick meal options – so that we can spend more time outside enjoying the weather with friends and family and less time in the kitchen.

Seafood is a natural, light, healthy, summer meal, and tuna especially is a perfect easy addition to your summer menus. Tuna is a great source of protein and has essential vitamins, minerals, like vitamin D, niacin, vitamin B12 and selenium, to help keep your body strong and your energy high this summer. Tuna is also a natural source of Omega-3 fatty acids which support heart health, promotes brain and eye health and promising research is indicating that it may also have a role in improving mood. The American Heart Association and Dietary Guidelines for Americans recommend Americans eat two servings of fatty fish, like tuna, each week.

Amount Measure Ingredients
1 15 oz can no-salt-added organic navy beans, rinsed and drained
3 4.5 oz pouches Zesty Lemon Pepper Tuna, StarKist tuna Creations
1 cup frozen whole-kernel corn, thawed
1 cup peeled, seeded and chopped cucumber
1/2 cup fat-free plain yogurt
1/4 measure finely chopped flat-leaf parsley
1   jalapeno chile pepper, chopped
    Salt to taste
9 cups packaged spring salad mix

To prepare:

In a large bowl, toss together beans, tuna, corn, cucumber, yogurt, parsley and chile pepper. Season with salt. Divide salad mix among six chilled plates. Divide tuna mixture among the plates.
