Penne Pasta with Sun Dried Tomato (Pesto!!)

Amount Measure Ingredients
1 package Penne Pasta
    Olive Oil (enough to sauté)
3 cups (or less) chicken broth Sun dried Tomato Pesto
5+ Tbsp Sun dried Tomato Pesto
5-10   Cloves – Lots of minced Garlic
2   Boneless, skinless Chicken Breasts
about 6   chopped Green Onions
3 Tbsp Butter
dash   Parsley (optional)

To prepare:

Boil water, cook pasta for 8-10 minutes (al dente). In the meantime… Heat oil, sauté garlic for about 2 minutes. Add chicken to pan with garlic cook for a bout 2 – 3 minutes per side. Remove & cut into bite size chunks. Pour the broth into the same pan, stir in the sun dried tomato pesto & add some salt. Get this boiling & Reduce to about half. Add your reserved chicken, onions & parsley. Whisk in butter, a little at a time to help thicken. Toss in the drained pasta… This will be a little soupy, so make sure you have some nice crusty sourdough bread to go with!
