A simple to make recipe with delicious results, it is as perfect for potlucks and tailgate parties as it is for a simple cozy dinner with family and friends.

Amount Measure Ingredients
2 lbs Prepared Masa for tamales (available in the meat section of most markets)
2 lbs lean coarsely ground beef (sometimes called “chili” grind)
16 oz can diced tomatoes drained
16 oz can whole kernel corn
1/4 cup diced green chilies
1 cup yellow onion, diced finely
2 cups grated cheddar cheese
1 cup sliced black olives
1 tablespoon garlic powder
3 tablespoon chili seasoning
    Salt and Pepper to taste

To prepare:

Heat a large skillet over medium-high heat until shimmering hot. Next, add the ground beef and sauté 5-7 minutes. Next add the diced tomatoes, chilies and onions, sauté until well mixed and beef is beginning to brown. Add the garlic powder, chili seasoning, corn and olives and remove from heat. Next, spread ½ of the masa in a thin layer on the bottom of a deep casserole dish. Pour the filling on top of the masa and top with a layer of cheese and remaining masa. Cover pan with aluminum foil and place in a 375 degree oven for 1 hour 15 minutes then remove foil and bake additional 15-20 minutes until masa is well set and firm to the touch, Serve immediately with sliced green onions, salsa and sour cream.
