Mamas always make the best Pot Roast

Amount Measure Ingredients
1   3 # Rump or Tri-Tip Roast
1 can Cream of mushroom soup
1 envelope onion soup mix
2   Soup cans of water
1 large fresh onion, cut up
4   Irish Potatoes cut in bite size
4   carrots, scraped and cut in bite size
2   sweet potatoes, peeled and cut in bite size
2 Tbsp olive oil

To prepare:

In a 4 quart pot, heat oil, sear roast on all sides. In a bowl, mix mushroom soup, dry onion mix soup and water. Pour over roast. Place chopped onion in pot. Bring to boil, cover, cut to med. low, cook 2 and a half hours, add vegetables and cook 30 minutes more.
