A fitting encore to Marinated roast lamb, this sandwich is an instant classic at football parties, tailgate parties, or a simple picnic in the park. A gyro is one of those exercises in contrasts. Warm slices of lamb are piled onto a piece of pita bread, and then topped with thinly sliced sweet red onions, chopped tomatoes, cool shredded lettuce, perhaps a few crumbles of feta and all is topped by tangy, creamy tzatziki sauce. Folded up and eaten out of hand it is a true piece of gourmet heaven.

Amount Measure Ingredients
2 lbs roast lamb; thinly sliced (you can use chicken as well)
2 roma tomatoes, diced
1 medium sweet red onion, sliced very thinly
2 cups iceberg lettuce, shredded
2 cups crumbled Feta cheese
6 Pita rounds

To prepare:

Warm the pita bread in a tortilla warmer or over a hot, ungreased pan until just warm and pliable. Divide the roast lamb evenly among the pita, then top with sliced onions, shredded lettuce and tomato. Sprinkle the crumbled feta on top, then drizzle tzatziki sauce on top and fold the pita in half taco style. Serve on plates with additional sauce on the side, garnishing with lemon slices if desired.
