Cheese Ravioli in a Seafood Alfredo sauce

This is one of those dinners that just speaks of decadence and sheer sensuality. The pillows of tender cheese ravioli, swimming in a creamy white sea of garlicky, cheesy Alfredo sauce that is further enhanced by the tender sweetness of calamari strips, shrimp, and imitation crab As a note, while you can use real crab meat in this recipe, the imitation crab has a less pungent flavor that suits more palates and is less expensive to obtain, Served in a shallow pasta bowl with a couple thick slices of garlic bread, and you are as close to Mediterranean perfection as you can be on home ground.

Amount Measure Ingredients
2 lbs prepared frozen cheese ravioli
4 cups whole milk
1 cup grated Parmesan cheese
1/2 cup butter or margerine
1 cup heavy cream
2 tbs flour whisked in ¼ cup milk
1 tbs crushed garlic
1/2 lb calamari steaks, thinly sliced
1/2 lb salad shrimp
1/2 lb lump style imitation crab
    Salt and pepper to taste

To prepare:

Bring 6 quarts of water with 1 tbsp salt and 2 tbsp oil to a rolling boil. Add in the Ravioli, return to a boil for 7 minutes then drain and shock (immerse in cold water) set aside in a large strainer. Heat a large skillet over medium heat and add the butter, melting completely. Add in the calamari strips and saute 1-2 minutes or until opaque. Next, add in the garlic, and shrimp meat stirring together well. Add in the imitation crab and the milk then return to a simmer. Gently stir in the Parmesan Cheese and the heavy cream. Bring back to a simmer and then add in the flour-milk mixture and bring just to a boil to thicken, add in the ravioli and stir in to coat. Serve immediately.
