Banana Pudding
Emily’s Banana Pudding

1 1/3 | cup | granulated sugar |
5 | Tbsp | cornstarch (heaping scoops) |
5 | cups | milk — Make half of it evaporated milk |
3 | large | egg yolks |
2 | tsp | vanilla flavoring |
3-4 | nice size bananas | |
1 | box | Nilla or Jack’s vanilla wafers |
To prepare:
Mix sugar and corn starch well, Slowly add milk, stirring to dissolve corn starch well. Beat eggs and set aside. On medium heat, cook, stirring constantly. When mix begins to get hot, slowly pour eggs into mixture and stir will. Cook to a bubbly boil. Remove from heat and add vanilla. Cool custard completely. (You don’t want to “cook” your bananas by adding custard too soon). After cooling, layer in a 2 qt. bowl, beginning with custard, add a layer of bananas, then wafers, Repeat. I always put wafers all around the bowl and some on top too.
