It’s vegan as made below….(but also delicious topped with sour cream & shredded cheddar cheese!) Enjoy!
|1||can||Hominy drain & rinse|
|1||can||Garbanzo drain & rinse|
|1||can||black beans drain & rinse|
|1||cup||chopped green or red bell pepper|
|1||cup||roma tomato, chopped, about 2 tomatoes|
|1/2||cup||onion, roughly chopped (about 1/2 large onion)|
|1-1 1/2||tsp||sauce (from a can of chipotle peppers in adobo sauce)|
Grease the crock pot, add quinoa & all the rest. Cover with 2 cups vegetable broth.
Cook for no longer than 3 hours. I did 1 hour on high & 1&1/2 on low. Top with chopped cilantro.
