Quinoa Comfort Food

It’s vegan as made below….(but also delicious topped with sour cream & shredded cheddar cheese!) Enjoy!

Amount Measure Ingredients
1 cup quinoa, uncooked
1 can Hominy drain & rinse
1 can Garbanzo drain & rinse
1 can black beans drain & rinse
1 cup chopped green or red bell pepper
1 cup roma tomato, chopped, about 2 tomatoes
1/2 cup celery
1/2 cup onion, roughly chopped (about 1/2 large onion)
1 cup shredded carrots
1/2 Tbsp cumin
1 Tbsp garlic, minced
1/4 tsp salt
pinch black pepper
1-1 1/2 tsp sauce (from a can of chipotle peppers in adobo sauce)
2 cups Vegetable Broth

Directions
Grease the crock pot, add quinoa & all the rest. Cover with 2 cups vegetable broth.
Cook for no longer than 3 hours. I did 1 hour on high & 1&1/2 on low. Top with chopped cilantro.
