Serving Size : 4 persons
Preparation Time : 30 minutes

Back when I was a young kid growing up, my mother came up with a novel solution to the dilemma of what to do with two pieces of leftover pizza and three kids. Enter the pizza omelet, actually more of a scramble, but my sisters and I called the pizza omelet, so the pizza omelet it stays. Now, I know what you must be thinking, "Pizza, for breakfast? Bleaugh!" But give it a chance. The pizza crust soaks up some egg and comes out fluffy and light, much like French toast and the toppings and cheese make a wonderful flavor combination, no matter what the combination of toppings (well, anchovies are the exception to this rule).

Amount Measure Ingredients
2-3 slices cold pizza
8 large eggs, beaten
1/4 cup heavy cream
salt and pepper (to taste)

To prepare:
Cut pizza into bite sized pieces and sauté in butter over medium heat till browned. Beat heavy cream into egg mixture then pour over the top of the pizza chunks. Cook approximately 5-7 minutes, stirring constantly till cooked through. Serve piping hot with toast. Everyone tends to get up in arms about the evils of Alfredo sauce how it is basically the worst food for your health that you could possibly eat. Well of course, everything can be hazardous to your health if ingested in massive amounts; even water can be harmful to the human body if you take in enough. The key to enjoying this dish and others without guilt is simply moderation. If you want fettuccine Alfredo, have it-just don't have a large portion.
