Maryann's Penne Pasta
Penne Pasta with Sun Dried Tomato (Pesto!!)Serving Size: 4 - 6

| cups | (or less) chicken broth Sun dried Tomato Pesto |

| Boneless, skinless Chicken Breasts |

To prepare :
Boil water, cook pasta for 8-10 minutes (al dente). In the meantime…. Heat oil, sauté garlic for about 2 minutes. Add chicken to pan with garlic cook for a bout 2- 3 minutes per side. Remove & cut into bite size chunks. Pour the broth into the same pan, stir in the sun dried tomato pesto & add some salt. Get this boiling & Reduce to about half. Add your reserved chicken, onions & parsley. Whisk in butter, a little at a time to help thicken. Toss in the drained pasta... This will be a little soupy, so make sure you have some nice crusty sourdough bread to go with!
