Apple Pie Filling

It's apple season, so that must mean it's Apple Pie season, too. Here is a lovely recipe for filling so those apples won't be crunchy inside your pie.

To prepare :
Blend sugar, nutmeg, cornstarch, salt, cinnamon. Add water and cook
till clear. (I used a large nonstick pot to cook this in and had no problems with sticking at medium to medium high temperature.)
Add apples and lemon juice and cook till apples are soft. After the apples have cooled, I store them in large (gallon size) zip lock bags.
(A nifty trick is to freeze the bag sitting in the pie pan in the freezer. Your apples will then freeze right in the shape of a pie, drop it in your shell, when ready and bake!!!!
