Cranberry Bars

| 1/3 | cup | butter (or margarine) |
| 1 | cup | finely chopped pecans (or walnuts) |
| 1 1/4 | cup | sugar |
| 2 | Tbsp | flour |
| 2 | beaten eggs | |
| 2 | Tbsp | milk |
| 1 | Tbsp | finely shredded orange peel |
| 1 | tsp | vanilla |
| 1 | cup | chopped cranberries |
| 1/2 | cup | coconut |
To prepare :
In a medium bowl, mix together the 1 cup flour (perhaps you'll need a pinch or two more) the 2 Tbl sugar, with a pastry cutter (or fork) cut in the butter (or margarine). Till it resembles course crumbs...this will seem dry. Because it is! Stir in 1/2 of the nuts. Now, press this mixture in the bottom of an ungreased 13x9x2 glass pan. Bake for 15 minutes @ 350.
Meanwhile....
Combine the 1& 1/4 cup sugar, the 2 Tbl flour. Stir in the eggs, milk, orange peel & vanilla. Fold in cranberries, coconut & remaining nuts. Spread this mixture over partially baked crust. Bake for 25-30 minutes more @ 350. (Or till top is golden.)
Cool pan on wire rack, cut into bars while still warm. Cool completely.
Makes 36 bars (91 calories....5 grams of fat)
